The notion of food or nutrition literacy refers to a person’s ability to acquire, understand, and process food and nutrition-related information to make appropriate nutritional decisions. The aim of this study is to present the concepts of nutrition and food literacy, to indicate the methods of their measurement and the factors determining their level, and to determine their importance. The study is based on a selective review of the literature. Food and nutrition literacy is defined as a distinct form of health literacy. The difference between food and nutrition literacy is not clearly defined. Both nutrition and food literacy can be related to the categories of health literacy proposed by Nutbeam, including functional, interactive, and critical categories. However, food literacy appears to be more complex and, as stated by many authors, it corresponds with most of Nutbeam’s categories. Nutrition literacy in the literature is generally described as the category of functional literacy. The level of nutrition and food literacy depends on many factors, such as age, gender, and level of education. Several instruments are available to determine the level of food and nutrition literacy. The most popular tools are the Nutrition Literacy Scale (NLS), Nutrition Literacy Assessment Instrument (NLit), Newest Vital Sign (NVS), Electronic Nutrition Literacy Tool (e-NutLit), and Short Food Literacy Questionnaire (SFLQ). Adequate levels of food and nutrition literacy are associated with beneficial dietary choices, which may be important in the prevention of chronic non-communicable diseases. Education and health communication interventions are crucial to improve food and nutrition literacy.

Through culture, social learning is passed on from generation to generation, and knowledge (and use) of this experience allows the group to move forward. Culture is an important part of social relations in society and has the same status in society as the economic, political, or legal system. The protection and appropriate presentation of tangible and intangible cultural heritage objects is a natural part of every cultural society. An inseparable part of these efforts should be the education of selected groups of society leading to an increase in cultural literacy, in a narrower context to an increase in the so-called cultural heritage literacy. The current education system in Slovakia is still looking for trajectories to lead students at all levels of education to the ability to find the necessary information, orient themselves in it in the context of broader contexts, analyse, synthesize and as a result apply it in practical life. The essence of education in the field of preservation and presentation of cultural heritage is the connection of current knowledge with historical experience and the potential of modern times, the aim is to acquire knowledge, skills and competencies leading to the creation of innovative concepts in the presentation of cultural heritage. The presented study provides a partial topic about the possibilities of symbiotic development of cultural, media and information competencies necessary for successful operation in the local and global environment, while we consider the combination of these literacies to be a particularly important goal of education. In the article, we perceive cultural (heritage) literacy in higher education as an important concept in teaching and we present a case study that shows the successful integration of this strategy into the area of higher education. The present study represents a specific initiative aimed at increasing cultural (heritage) literacy in the university environment. On the example of the selected study program, we point out the so far little developed possibilities of implementing cultural (heritage) literature in education and show a possible approach to developing similar considerations. The study is designed as a theoretical-practical output providing analytical and critical reflection on related concepts, including a synthesizing view of them. The theoretical part is followed by research and a search for facts that provide an empirical picture of the implementation of cultural (heritage) literature in the process of the selected strategy of higher education. The symbiosis of certain theoretical reflections and concrete / real practical experiences forms a knowledge base of perception.

The article points out the need of educational research on the illiteracy phenomenon in the societies, where compulsory education is enforced. The scale of illiteracy and lack of knowledge about functional illitera cy in the present time poses a number of challenges for science. The most important are: identification of groups with reading and writing deficits and etiology of illiteracy phenomenon, reflection on the essence of functionally illiterate adults learning, the role of school and other agents of socialization in reading and writing development, literacy opportunities in the workplace or the contribution of the arts to popularize adult literacy and breaking social taboo, which is inability to read and write in highly developed countries.

Aim. Based on the analysis of two social-cultural cases (Lithuania and Georgia), the aim of the research is to reveal the necessity to create a strategy for the development of cultural literacy in schools; to examine the corpus of theory that deals with the concept of cultural literacy and based on the analysis of the latter to suggest a hypothesis for the development of cultural literacy. Methods. The theoretical literature review (i.e., its relevance in academic discourse and international organisations as well as individual countries) has helped to establish the already existing definitions of the concept of cultural literacy, their interaction and to develop a new hypothesis to be tested for the development of cultural literacy in schools. Results and conclusion. The literature review has shown that representatives of different theories offer different definitions of cultural literacy, although there is a common theoretical line on the basis of which I offer to the reader my own structure of cultural literacy development strategy. The analysis of historical and geographical contexts of Lithuania and Georgia has revealed that nowadays even small countries’ society, with a dominant single nation, in some ways can be considered as a multicultural society. Schools in the said countries have become an intercultural place of learning, where reemigrants, migrants, ethnical minorities and locals are brought together. The analysis has led to the conclusion that taking into account modern challenges, the importance of the development of cultural literacy in schools is growing both for international organisations and for individual countries. The concept of cultural literacy is considered value-based knowledge, which comes as a response to the requirements of society’s sustainable coexistence.

The reliability and validity of the telephone-based and online Polish eHealth literacy scale based on two nationally representative samples

Adequate ehealth literacy is one of the key instruments safeguarding people against unreliable health-related information obtained from the Internet. This paper presents an assessment of the reliability and the validity of a Polish version of the ehealth literacy scale (Pl-eHEALS). The assessment was carried out on the basis of two nationally representative samples of the Polish population. In the first survey of adults at least 50 years old, the technique of computer-assisted telephone interviewing (CATI) was applied. In the second survey of young adult women (18–35 years old), the technique of computer-assisted web interviewing (CAWI) was used. The reliability and the validity of the Pl-eHEALS was analyzed. There were no floor or ceiling effects revealed in either sample. The Cronbach’s alpha coefficients were 0.90 and 0.88, and Guttman split-half coefficients were 0.89 and 0.81, respectively. Exploratory factors analysis revealed single factor models in both cases. The sum of squared loadings in the first survey was 6.090 and accounted for 58.72% of the variance. In the second survey, the sum was 5.927 and was responsible for 55.06% of the variance. Hypothesis testing showed that, for older adults, higher ehealth literacy was prevalent in the respondents who used the Internet more frequently. Among young adult women, higher readiness to use the Internet as a primary source of health-related information and to undertake specific internet health-related activities was associated with higher ehealth literacy. The analysis reported in this paper confirmed the reliability and the validity of the instrument. It should be stressed that, prior to this study, there was no validated Polish version of the eHEALS that could be used with Polish-speaking respondents.

Media literacy is a critical skill, a subset of information literacy, that at this point in history is more important than ever. Students entering higher education generally receive information literacy instruction at the lower division level. However, the skills taught at this level are rudimentary and geared toward introducing students to scholarly and peer-reviewed sources. Conversely, students have relied upon more popular resources in K-12 education and may not have the evaluative skills to more responsibly consume, and ethically use, popular, news, and social media content. Current instruction methods silo instruction between scholarly and peer-review sources for academic use separately from media consumption in everyday life. This separation is problematic as students may achieve academic information literacy and still fall prey to misinformation, they find online and in social situations. While the Association of College and Research Libraries Framework addresses the need for a set of information literacy abilities, the National Association for Media Literacy Education takes this further with their core principles. At California State University, Bakersfield, media literacy is integrated into several information literacy opportunities. However, it is in full-term information literacy instruction, where we most fully develop the concepts and techniques specific to media literacy.

Eating choices - the roles of motivation and health literacy : a cross-sectional study

Food choices are determined by intrinsic and extrinsic product characteristics, biological and physiological features, psychological factors, and situational and socio-cultural factors. Self-determination theory offers the explanation of health behavior change identifying motivations located along a continuum of autonomy. Another approach to the motivations guiding health behaviors, including food choices, relies on distinguishing thematic categories. Health motivations seem to be an obvious determinant of health behaviors, but final decisions regarding health are also the effect of other types of motivations such as economic, cultural, or emotional. The role of marketing pressure in modern society is perceived to be an important source of motivation for purchasing food and other products. The Motivation–Opportunity–Ability (MOA) framework was initially proposed in order to explain the processing of brand information from advertisements and was later expanded to other areas, including health and nutritional behaviors. The aim of this study was the analysis of determinants of food choices. We have developed a common regression model including six categories of motivations addressed by the Eating Motivations Scale and three health literacy types corresponding with element of ability from the MOA framework, adjusted for socio-demographic factors, health status, and the use of the Internet and TV. The analysis was performed on data from a computer-assisted web-based interviewing (CAWI) survey among 2008 adult Internet users completed in May 2022. The uni- and multivariate linear regression models were developed with the Index of Unhealthy Food Choices (IUFC), calculated based on the responses to items asking about the frequency of the consumption of twelve food categories. Univariate modeling revealed that IUFC is significantly associated with health, food, and e-health literacies and with five out of six eating motivations. However, the multivariate regression model yielded significant associations only for eating motivations but not for the three literacy scores. Health motivation was negatively associated with IUFC (B, standard error (SE): 0.83, 0.07; 95% confidence interval (95% CI): 0.98–0.69), but positively with emotional (B, SE: 0.22, 0.04; 95% CI: 0.14–0.3), economic (B, SE: 0.41, 0.08; 95% CI: 0.25–0.56), and marketing (B, SE: 0.62, 0.08; 95% CI: 0.47–0.78) motivations. Our findings suggest that motivations guiding food choices may prevail over the element of ‘ability’ distinguished in the frameworks and models that explain people’s behaviors, including behaviors relating to health. Thus, it is essential to emphasize development of appropriate motivations and not only to provide knowledge and skills. Furthermore, one should also remember motivations other than health motivations when searching for the determinants of health behaviors.

This report explains how the PRODIGI project created and tested new tools for measuring people’s understanding and use of artificial intelligence (AI) before and after taking part in educational programmes. The project focused on groups who may have less access to digital technologies: young refugees in Belgium, students from disadvantaged backgrounds in Portugal, and older adults in Poland. Because AI is increasingly present in everyday life, from chatbots to image generators, the project set out to design assessments that are practical, age-appropriate, and relevant to real situations. The research team reviewed existing AI literacy tools, interviewed experts in digital and media education, and worked directly with young people and seniors to understand which questions were clear, which felt confusing, and which connected to their daily experiencesA pilot study involving 1,200 young people in Belgium was used to refine the structure of the tool and understand how AI skills appear in practice. The results showed that instead of treating technical, creative, ethical, and information-checking skills as separate abilities, young people tend to use them together when interacting with AI.

The awareness of the role of commercial determinants of health and the readiness to accept restrictions on unhealthy food advertising in Polish society

The negative consequences of commercial determinants of health (CDoH) have become a major challenge for public health systems, especially in terms of non-communicable diseases (NCDs). CDoH are defined as profit-driven factors that influence health. In this study, we assessed the awareness of CDoH and the attitudes toward potential restrictions on advertising, as well as fiscal interventions targeting food products with harmful effects on health in Polish society. Our analysis is based on data from a computer-based web interviewing (CAWI) survey performed in May 2022 among 2008 adult internet users from Poland. Multivariable logistic regression models were developed for variables derived from three items exploring the respondents’ understanding of the relationship between CDoH and NCDs, as well as three items asking about their acceptance of a prohibition of advertising unhealthy products during sports events, a general ban on unhealthy food advertising, and their attitudes toward sugar-sweetened beverages (SSBs). Food (FL) and e-health literacy (eHL) levels were consistently positive predictors of both awareness of CDoH and acceptance of the proposed actions. Both higher FL and eHL were significantly associated with the opinion that advertising unhealthy food is associated with the prevalence of NCDs (OR, 95% CI: 1.03, 1.02–1.05, and 1.04, 1.02–1.06, respectively). Health literacy was less frequently a significant predictor of the dependent variables. Among sociodemographic factors, a respondent’s level of education and age showed a significant relationship with their awareness and acceptance of countermeasures against CDoH. Respondents with a university master’s level of education were more likely to agree with the statement on the relationship between big industry profits and harm to society’s health (OR, 95% CI: 1.96, 1.42–2.69) and to support a ban on advertising unhealthy food similar to that for tobacco products (OR, 95% CI: 1.66, 1.21–2.27). Respondents suffering from chronic diseases were also consistently more likely to show a greater understanding of the harmful impact of CDoH and support proposed restrictions. For example, they were more likely to agree with restrictions on advertising harmful products during sports events (OR, 95% CI: 1.23, 1.02–1.50) and the introduction of a sugar tax (OR, 95% CI: 1.26, 1.03–1.54). Our study revealed that more than 50% of the Polish population is conscious of the problem of the harmful effects of big industries producing and selling processed food, sugar-sweetened beverages, and alcoholic beverages. Interestingly, slightly more than half of the respondents supported the introduction of restrictions on advertising such products. Still, only approximately 30% of them accepted a sugar tax to counter the obesity epidemic. The results of our study indicate that Polish society is open to the introduction of regulations aimed at limiting the impact of commercial determinants of health. To our knowledge, this is one of the first studies to assess the awareness of CDoH and the acceptance of restrictions to limit their impact.

Acceleration of globalisation and the Fourth Industrial Revolution expanded opportunities for intercultural interaction, facilitated by more accessible and affordable information and communication technologies (ICT). Media literacy as framed by UNESCO is to be interpreted as “[u]nderstanding and using mass media in either an assertive or non-assertive way, including an informed and critical understanding of media, the techniques they employ and their effects. Also the ability to read, analyse, evaluate and produce communication in a variety of media forms” (alias “the ability to decode, analyse, evaluate and produce communication in a variety of forms”). Furthermore, media and information literacy “refers to the essential competencies (knowledge, skills and attitude) that allow citizens to engage with media and other information”. Dynamic developments in the contemporary world brought about by the post-factual era and the COVID-19 pandemic reinforced the exposure of the public to misinterpretation. Being conscious of variable and increasingly multidimensional presentation in academic literature of what it takes to be literate, in our paper we reflect on media literacy alias a synergy of literacy and multiple intelligences. Since on 12 April 2022 UNESCO launched a global survey “Learning from the COVID-19 crisis to write the future: National policies and programmes for youth and adult literacy” addressed to all 193 UNESCO Member States to fill in the gap and collect information on the impact of the COVID-19 crisis on youth and adult literacy, our online questionnaire is complementary in terms of scope (media literacy) and outreach (higher education students). The aim of this paper is to investigate awareness, understanding and interpretation of literacy as such, and media literacy in particular, within the cohort of native and international students at the University of Economics in Bratislava, Slovakia. The findings revealed a higher ratio of the general understanding of communication and its role in the society, but a lower ratio of awareness about literacy and media literacy. In the context of Bloom’s taxonomy of educational objectives our main suggestion, therefore, is to reinforce the media literacy curriculum in terms of experiential learning in line with the so-called learner-centred approach to education when the needs/aspirations of individuals are placed at the centre and focus is on the experiences they bring to the learning situation.
